Here is how you make Vanilla Protein "Ice Cream":

At least THREE hours before preparing: Freeze the coconut milk in an ice cube tray. When frozen, add 1/2 c. water, the coconut cubes, pudding and approx. 1 cup ice cubes to a high powered blender like Vita Mix. Put on the Ice Cream cycle and mix. If it isn't thick enough, add more ice cubes. You can also make this in a "no ice" style ice cream freezer. If needed, put in the freezer for about 45 minutes before eating. Great with strawberries.
