sugar 1.5 oz
orange - 1/2 a fruit
lemon - 1/4 of a fruit
butter 1 oz
orange liqure 1/2 oz
cognac 1/2 oz


How Do I Make Crepe Suzette?

Here is how you make Crepe Suzette:

sift flour, sugar and salt; add eggs and just enough milk to form a paste. Mix until smooth and lump free. Slowly add the res to fthe milk and clarified butter. Batter should be the consistancy of heavy cream. If it appears lump but it through a strainer and then let it rest 2 hours.For the sauce: melt sugar in pan using dry method, do not stir just melt over med/hi heat. Once melted add in orange/lemon rind. Add butter and juice to stop cooking process and create syrup. Add orange liqeur and begin coating crepes. Fold in half and then 3rds in the pan and plate.
