Here is how you make Barfoot's Toffee Cupcakes:

In a clean dry bowl, whisk the egg whites untill really fluffy.Fold in the flour, 4 tbsp Splenda, 15g Delight Powder and the egg yolk, add a little milk if required. Pour into 12 cupcake cases.Bake for 10 - 15 minutes at 160C (fan assisted).For the topping, whisk the remaining Delight Powder with the soft cheese, icing sugar, vanilla extract and 2 tbsp Splenda. Cover and fridgerate for 30 minutes. Give the mixture a quick stir again before piping or spreading onto the cooled cakes.Top with sprinkles & enjoy.Serving Size:?Makes 12 cupcakes
