In saucepan heat the butter, milk, mashed potatoes, and 1/3 cup sugar until butter is melted. In large bowl beat egg with salt, add lemon juice and zest. Add warm, NOT hot, milk mixture to beaten egg slowly, then add yeast mixture. Add about 3 to 4 cups of flour. I beat it with the dough hooks in the hand mixer. Dough should be soft, but not sticky. Add more flour as needed. I needed close to 4 cups. Cover and let rest until at least doubled. (Took about 3 hours) Punch down and roll out to about 1/2 inch thickness. Cut with donut cutter and let rest on parchment paper, covered with a towel for about an hour. Can go a bit longer if needed. Heat hot oil in cast iron pan at least an inch deep. Cook about 3 at a time in the pan so as not to crowd them or bring the temp down. Roll in cinnamon sugar as soon as they come out of the hot oil.
