heat about 1.5 inches water in a 10 in sauce pan to boiling
spoon dumplings into hot water, flip over, becareful not to let water boil over...lower heat to simmer if need be...cook then remove dumpling to bowl, finish all egg whites in this manner.

beat egg yolks with 1/4 C sugar, slowly add hot water continually stirring add about 2 Cups hot water. (original recipe called for milk instead of water)

place egg/hot water mixture into sauce pan, slowly raise temp to high simmer, continually stirring (this will curdle easily so you have to be careful) until custard thickens, add vanilla

drain any water under egg white dumpling, pour custard over. refrigerate until cool.
