Here is how you make Penny's Easy Healthy Cheesecake:

Yield: 4 very generous servings.Bring water to a boil, measure out 2/3 cup.In a small bowl, stir boiling water into gelatin at least 2 minutes until gelatin is completely dissolved. Cool 5 minutes.Pour into food processor. Add cheese/yogurt (add cream cheese in large chunks); cover. Process until well blended, about 2-3 minutes.Pour into pretty bowl. Add whipped topping (reserving one dollop) and gently blend until well mixed. Wipe top edge of bowl clean, if needed. Put dollop of whipped topping on top to decorate.Cover with plastic wrap. Refrigerate until set, about 4 hours.VARIATIONS:1. Pour into graham cracker crust, if desired. Be sure to add this to your nutritional values.2. Use 1% cottage cheese instead of yogurt.3.
