1 (14 oz) can cannellini beans, drained and rinsed
1 (14 oz) can chickpeas, drained and rinsed
1 small bunch kale (about 4 cups)
1 (11 small zucchini, chopped
2 medium potatoes, peeled and chopped
1 (14 oz) can diced tomatoes
6 c chicken or vegetable broth, or water
1 T dried thyme and/or rosemary
salt and pepper to taste
grated Parmesan cheese

Here is how you make Quick and Easy Minestrone:

This makes a huge pot of soup, probably around 8 servings.*It is a good idea to cook the pasta for this soup in a separate pot and add it to each individual bowl when serving, as otherwise it gets mushy and soaks up all the broth.Before doing anything else, prep all the vegetables, washing, peeling, and chopping as necessary.In a large Dutch oven or pot, heat 1 T olive oil over medium heat. Add garlic and cook 1 minute or until just golden brown. Add onions, carrots, and celery and cook until tender, 8-10 minutes. Add the rosemary and thyme, both cans of beans, tomatoes, zucchini, potatoes, kale, and broth and bring to a boil. Simmer for 15 minutes. Season with salt and pepper to taste.While the soup is simmering, prepare you pasta.
