2 1/2 C whole wheat flour
1 package (a little less than 2 tsp) Instant Yeast
1/2 tsp salt
1/4 tsp baking soda

2 small apples cored and chopped
1 tbsp brown sugar
2 tbsp dried cranberries
1 tsp flax meal
1 tbsp cinnamon

Put lemon juice in milk and let sit for 5 mins. Heat milk until warm to the touch. Add pureed apple. Combine all dry ingredients and then add them to the liquid one cup at a time, until a soft dough forms. Turn dough out onto a floured surface and knead 20 times. Cover and let rest for 15 mins. In a small bowl, still together filling.On a floured surface, roll dough out into a large rectangle. Spread the filling over the dough, roll up into a log and pinch the seam to seal. Slice into 1 1/2 inch pieces and place cut side up in a lightly greased baking pan with sides. Cover and let rise 30 mins or cover and refrigerate over night. You can probably skip this step if you're using instant yeast. If baking immediately, preheat oven to 400 degrees F (200 degrees C).Bake in preheated oven for 20 to 25 mins, until golden brown.
