**The rum can be replaced with all juice or even tea, coffee or water.

1. In a medium mixing bowl, combine fruit, rum, juice, sugar, applesauce and salt. Refrigerate over night. 2. Preheat oven to 350 degrees F (175 degrees C). Grease one 5x9 inch loaf pan.3. Sift together the flour, soda, ginger and cinnamon. Stir into the fruit mixture.4. Add the nuts. The dough will look dry; don't add water or it will become too wet as it cooks. (I made this mistake once.)5. Pour into loaf pan and bake for 1 hour or drop by the teaspoon on a greased cookie sheet and bake for 15 minutes.
