Preheat oven to 325 degrees2. Spray cupcake pan with non stick spray, you can also use baking cups. (I used baking cups)3. Mix softened cream cheese and Splenda sucralose and sugar blend together with a wooden spoon (I had to soften my cream cheese a little more in the microwave at 20 seconds)4. Add eggs one at a time, be sure to mix the egg completely before adding the second one. (I used a hand mixer for this part)5. Add the vanilla extract, mix well6. Add the lemon zest, mix well7. Pour batter into cupcake tray (I was able to make 12 with mine)8. Bake for about 35-40 minutes, turn oven off,do not open the oven door9.
