Egg Beaters (equiv. of 2 eggs) 4 T. or equivalent Stevia (Truvia, Purevia, etc.) 1 c. skim milk 2 oz. fat free cream cheese 1.2 tsp vanilla 1 T. I Can't Believe Its Not Butter 12 oz. fresh blackberries washed and dried 1 T. fresh thyme leaves Powdered sugar 1/4 c. water How Do I Make Blackberry and Thyme Frittata?Here is how you make Blackberry and Thyme Frittata: 1. Preheat oven to 400.2. In food processor combine flour, salt, eggs, cream cheese, 1/2 of the stevia, milk and vanilla. Blend until smooth.3. In a cast iron skillet on the stove, melt ICBINB over medium heat. Add blackberries and thyme and cook until berries are softened and coated with butter.4. Sprinkle berries with remaining stevia and cook until syrupy. I added a little water here to help make it a little more syrupy.5. Pour batter over berries (do not stir) and bake for 20 minutes or until golden brown.6. Serve immediately with a dusting of powdered sugar, yogurt, whipped cream or ice cream. Serves 8.While not one of the most divine desserts (or breakfasts) this is a healthier sweet alternate.**Please note: I modified this recipe from one found in In Style magazine. It was originally called Blackberry & Thyme Clafoutis by Chef Tim Love. Please watch while cooking as baking time can vary by pan thickness. Make sure it cooks all the way through. Also with the lower fat ingredients I substituted, this will not brown or rise like a normal dessert.
