1 level tsp bicarbonate of soda (baking soda)
1 level tsp salt
100g sultanas or raisins
200g soft brown sugar
150g butter or margarine
175g molasses or black treacle
175g golden syrup (or corn syrup)
300ml milk (or soy milk)
2 eggs


How Do I Make Fruit gingerbread?

Here is how you make Fruit gingerbread:

Line a 14x10 inch pan such as a roasting pan with greasefree paper (or greased greaseproof paper).Mix flours with ginger, bicarb and salt in a large bowl. Stir in the rasins.In a saucepan, melt the butter, brown sugar, molasses and golden syrup together gently until the butter is melted. Stir to mix, then pour into the flour mixture and mix together with a wooden spoon.Warm the milk in a jug in the microwave, or in the same saucepan over the stove, but don't let it boil. When warm, beat in the two eggs one at a time, using a fork. Stir this a bit at a time into the mixture in the bowl. It will become quite runny by the time all the milk is added.Pour into the prepared tin, and bake for 30-40 minutes at 170C (160 with a fan oven). Check after 30 minutes; if the top is firm, turn off the heat and leave in the oven for another ten minutes or so. Cool on a wire rack, then cut into 48 pieces. Freezes well.
