The ingredients for Fruit and Nut Balls are:

1/2 cup dates, pitted
1/2 cup raisins, dark or golden
2 tbs cocoa -or- carob powder (unsweetened)
2 tbs honey
1/2 cup walnuts
1/2 cup sunflower seeds (un-salted)
2 T flax seed
3 T coconut flakes (unsweetened)

How Do I Make Fruit and Nut Balls?

Here is how you make Fruit and Nut Balls:

Put the walnuts and the sunflower seeds in a food processor (or blender). Blend until finely ground. Add the flax seed (whole seeds or ground) and cocoa and blend together. If you have a food processor- you can add the dates and raisins right to the mix. If you are using a blender, these may just get stuck! So, I would reccomend chopping them seperately.Remove contents from food processor and add honey. Mix all ingredients together and stir well. This recipe will make 25 small balls. One serving is one ball, but you probably won't be able to eat just one! I like to roll the balls in shredded coconut (the coconut was part of the calorie count). If you dislike coconut, you can omit this step (and roll in some of the ground nuts)Store in an airtight container at room temperature.Number of Servings: 25Recipe submitted by SparkPeople user LAURADNYC.
