2 tbsp Margarine

1 large Egg
2 tbsp Canola Oil
1 tsp Vanilla Extract
1/4 tsp Almond Extract

6 cup, diced Rhubarb, divided
1/4 cup Orange Juice
1/2 cup plus 2 tbsp Granulated Sugar
4 tbsp Cornstarch
1 tsp Vanilla Extract


How Do I Make Rhubarb Fruit Bars?

Here is how you make Rhubarb Fruit Bars:

CRUSTCombine 3/4 cup of the oats, flours, brown sugar, and salt. Mix well. Cut in margarine and coconut oil with a pastry cutter or two forks until the size of small peas. In a small bowl whisk the egg, oil, and extracts together. Pour egg mixture into oat mixture, continue mixing with pastry cutter until the mixture comes together. Remove 1/2 a cup of the mixture. Pat remaining mixture into the bottom of a greased 9x13 pan. Mix the 1/2 cup of mixture you removed with the remaining 1/4 cup of oats. Reserve for topping.FILLINGCombine 4 cups of rhubarb, granulated sugar, cornstarch, orange juice and vanilla extract in a medium saucepan. Bring to a boil over medium low heat stirring constantly until the rhubarb has softened and the mixture is thick (approx 10 min). Remove from heat and stir in remaining rhubarb.ASSEMBLEPour rhubarb mixture over prepared crust. Sprinkle remaining oat mixture over the top of the rhubarb mixture. Bake for 15 minutes then reduce oven temperature to 350 and bake until the crust and topping are lightly browned, 25-30 minutes. Let cool completely (1 1/2 hours) before cutting into 18 bars.
