1 1/4 cup powdered sugar, unsifted
2 tablespoons of cocoa, regular or extra dark

How Do I Make Peanutbutter Fudge?

Here is how you make Peanutbutter Fudge:

---Melt white chocolate over very low heat, stirring frequently. Stir in peanutbutter and peanuts. Remove from heat. Stir in powdered sugar until fully blended and mixture is somewhat stiff and forms a ball. Allow to cool for at least 1 hour or until room temperature.---When at room temperature, pat fudge with paper towels or typing paper to soak up excess oil, turning over and pressing the fudge as you go. Continue until fudge is no longer shiny (about 5 sheets). (Adding more powdered sugar will speed up or cancel this process, but can make for overly sweet fudge imho.) Fudge should stick nicely together and be flexible, but should "break" when pulled apart.---Gather the fudge into a solid ball, place on solid surface, and roll it out to about 1/4" thickness. Cut into 1" squares or use a donut-hole cutter on the fudge to cut into individual servings. Ball up, roll, and cut fudge until all fudge is used. Set pieces aside on waxed paper. ---Let pieces "dry out" on waxed paper for at least 1 hour, at room temperature, until fudge is stiff. Sift 1 tablespoon of cocoa over the pieces. Move pieces to a second piece of waxed paper, flipping them over, and let them "dry out" for at least 30 minutes. Sift the second tablespoon of cocoa over them. Put a layer of waxed paper over fudge; press fudge slightly to set cocoa. Move to container or platter.--Store in airtight container up to two weeks or freeze up to 6 months.Number of Servings: 70Recipe submitted by SparkPeople user WAIT4IT.
