Here is how you make Cardamom-Ginger Crunch:

1. Heat oven to 375. Grease 9x13 baking dish; set aside. Put 18 tbsp butter and 1 cup sugar in a large bowl; beat with a mixer on medium until fluffy. Add flour, 3 tsp ginger, 1 tsp ground cardamom, baking powder, and 1 tsp salt; mix until incorporated but still crumbly.2. Transfer mixture to baking dish; press flat with hands. Bake until shortbread is golden brown, about 20 minutes. Let cool.3. In a 1 quart saucepan over medium heat, combine remaining butter, ginger, cardamom, and salt, add the confectioners sugar and corn syrup. Bring to a boil and pour over shortbread; cool.
