Here is how you make Fiona's Ginger-Nut Biscuits:

Heat oven to 375*, place rack in middle of oven, line 2 baking sheets with parchment paper.In a large bowl, either by hand or with an electric handheld mixer, cream together the butter and brown sugar until fluffy. Beat in the honey and eggs until well combined and smooth.In another bowl, mix together the flour, ground ginger, baking soda, cinnamon, and salt. Mix the dry into the wet in two equal additions until just combined. If adding the crystallized ginger, chop fine (add a little of the dry mixture to keep the bits from sticking together as you chop). Add the chopped ginger with the last of the mixing.Shape into balls the size of golf balls and roll in the granulated sugar to coat. Place on the baking sheets 1 inch apart. Do not flatten.Bake until the tops start to crack and are golden around the edges, 10 - 12 minutes. Cool 5 minutes on the baking sheet before transferring to a wire rack.
