Here is how you make Plum Cobbler (Gluten Free):

1) Preheat oven to 350?F2) In a large bowl, combine 1/2 cup white sugar, plums, cornstarch and cinnamon. Place the fruit mixture in a 8x11.5 casserole pan.3) In a medium bowl, combine the remaining 1 Tbls of sugar, flour, xanthan gum, baking powder and salt. Cut the butter in with a fork or pastry blender until the mixture resembles coarse crumbs. Stir in the milk and egg until just moistened.4) Drop batter on fruit, or if desired, spread batter in stripes.
