1 cup butter
2 Tbl water
1 teaspoon vanilla
1/2 tsp salt
1 bag chocolate chips
3/4 cup of dry roasted, unsalted peanuts - chop in a blender or small cuisinart.


How Do I Make Homemade Peanut Toffee?

Here is how you make Homemade Peanut Toffee:

You will need a candy thermometer, a cookie sheet, and preferably a silpat (silicone baking sheet liner). Heat in a saucepan over medium heat - butter, sugar, water, salt, and vanilla. The mixture will get thick and dark in color. Once it gets dark in color, pull out the candy thermometer. When the mixture gets to around 310 degrees, pour contents onto a silpat lined baking sheet and let cool about 5-10 minutes before scattering chocolate chips evenly over toffee. Allow to sit a few minutes before spreading melted chocolate evenly over toffee. Sprinkle nuts on top and allow to completely cool, and chocolate to harden (about an hour). You can even stick the sheet in the fridge to help cool. Once complete cool, break into pieces.
