In a small sauce pan, heat milk to 110?. Pour into a bowl and sprinkle the yeast over it and allow it to sit for 5 minutes.Stirring constantly, add sugar, salt, butter, cinnamon, nutmeg and eggs. Cover with plastic warp and allow it sit in the refrigerator overnight. Let dough sit out at room temperature for 30 minutes. Line a large baking sheet with parchment paper and divide the dough into small, golf-ball sized pieces (36 pieces) and place ?" apart (you will need 2 baking sheets). Cover with clean kitchen towel, in a warm place and let them rise again for 1 hour.Brush the buns with egg wash (1 egg white mixed with 2 tbsp warm water, whisked together. In a preheated 400? oven bake buns for 10 minutes then reduce heat to 350? and bake another 15 minutes, until golden brown.
