1 tsp vanilla

2 tablespoon lemon extract (sometimes I add some lemon juice and less lemon extract)

2 tablespoon lemon rind (the yellow part only-the white part of the rind is bitter).

Here is how you make LEMON RICOTTA CHEESECAKE:

Beat all till creamy. Bake in preheated 350 degrees oven in springform pan (I put the pan on top of a cookie sheet sprayed with Pam as it tends to leak a little as it is cooking).
