What Are The Ingredients For Liz's Lemon Curd Recipe?The ingredients for Liz's Lemon Curd are: 2 whole eggs2 egg yolks 3/4 C white sugar juice of 3 good-sized lemons (approx 2/3 C) zest of 3 lemons (approx 2 Tbsp) 4 Tbsp butter @ room temperature How Do I Make Liz's Lemon Curd?Here is how you make Liz's Lemon Curd: Cream butter and sugar together in a medium sized metal bowl. Add eggs. Cream again until smooth. Add lemon juice (strain first please!) and zest. Beat again until sort of smooth (mixture will look curdled -- this will disappear as soon as the butter melts). Place bowl on top of a simmering pot of water (or double boiler -- but who has one of those?). Cook for about 10 minutes, stirring constantly, until the curd has the same consistency as hollandaise or sour cream or will coat the back of a spoon. Remove from the heat immediately and strain to get any bits of egg and any larger chunks of zest out. The result is addictive. Serve on toast, with shortbread or with meringue for a great dessert. Meringue is also a good way to use up those extra egg whites.
