Empty out mix into bowl, instead of adding eggs/oil/water, mix in the diet soda. Stir to incorporate, bake in greased cake tin or cupcake papers for 10-20 minutes, according to directions.It doesn't matter which form you bake it in =)Once the cake is done, remove it from the oven. While it's cooling, prepare the lemon pudding (I put it in a tupperware container and shake the hell out of it!). The instant kind thickens in about 5 minutes. You don't need to wait for it though.Set the pudding aside. Take apart the cake, crumbling with your hands. Add about 1/4c of the cake into the bottom of the parfait glasses (or mugs, whatever you decide to use).Add a few spoonfuls of pudding, and layer again with cake. Repeat until all of the cake/pudding is gone.Add the egg whites to a bowl and whisk until soft peaks form.
