A neighbor's gift of an older unused but fancy ice cream maker prompted us to start experimenting with our own recipes. We love sherbet and sorbet, especially in summer, but there were no sherbet recipes included in the instruction book. This sherbet really pops with lime flavor! We plan to experiment next with lower fat replacements for the half and half, to see how low fat we can go while still getting the creamyness needed.

1 3/4 cups granulated sugar
zest (green part only) from 2 limes

green food coloring (optional)


How Do I Make Mo's Lime Sherbet?

Here is how you make Mo's Lime Sherbet:

Juice one lemon and enough limes to make one cup of juice. Add 1/2 cup of chilled water to the juice. Keep cold.Pulse the sugar and lime zest together several times in the food processor until the zest is broken into tiny pieces and incorporated into the sugar. Add the half and half and pulse until the sugar is well incorporated.Combine the juice mixture and the half and half mixture gently. Stir in a drop of two of green food coloring if you like. Process in your ice cream maker according to the manufacturer's directions. I use a Cuisinart ice cream maker, and it takes approximately 25-30 minutes to process the mixture.The sherbet will be "soft serve" at this point. You can serve it immediately, or transfer it to a chilled container and freeze to harden before serving (it actually tastes better after it has "ripened" in the freezer for a few hours).
