1 tin skimmed evaporated milk (410g)

Here is how you make Rhurarb Mousse:

Chill milk overnight or pop in the freezer for 20 minutes. Wash and slice rhubarb into 2 cm sections. Simmer in 250 mls water until soft. (The will depend on the thickness of your rhubarb, but about 5-7 mins). Add jelly and stir until dissolved. Allow to cool to room temperature. Add Canderel to taste. Stir well to break up the pieces of rhubarb.Whisk the milk until light and fluffy. Gently fold in the cooled rhubarb mixture. Pop in the fridge until needed. Wait for the applause!
