1/4 C packed light brown sugar

1 tsp ground cinnamon
1 tsp baking soda

1/2 tsp vanilla extract
1 whole egg
2 egg whites
1 C Plain non-fat yogurt
1/2 C honey
1/4 cup water+3/4 tbsp chia seeds
1 med granny smith apple, peeled, cored and diced

Here is how you make Apple Bran and Flax Muffins:

In a large bowl, combine first eight ingredients. In another bowl, wisk the egg, egg whites, yogurt, honey, vanilla and chia seed and water mixture. Gradually combine with dry ingredients, then stir in apple. Bake in a preheated 375 degree oven in a muffin pan lined with muffin cups for 10-15 minutes or until a toothpick inserted in center comes out clean. Cool on wire racks before removing muffin paper.
