Here is how you make Elyssa's Blueberry Muffins:

In large mixing bowl combine oats, lemon zest and juice, orange juice, applesauce, vegetable oil, sugar, and vanilla. Stir until well blended. Slowly stir in one and one-half cups flour. Stir in pecans. Roll the blueberries in the remaining flour and gently stir them into the batter. Fill cupcake tins 2/3 full.
