Here is how you make Z-Bread/Muffins:

1. Preheat oven to 325 degrees F. 2. Grease pan(s) of your preferred shape, cake or loaf, or use muffin papers in a muffin pan.3. Mix flour, baking powder & soda, spices, and optional flax in a bowl. 4. Beat eggs, oil, maple syrup, and sugar in a large bowl. Then add the dry mixture to the bowl and beat again.5. Grate the zucchini and add it and the walnuts to the bowl, combining and mixing well. Pour the batter into the pans or muffin cups. Baking time will vary from about 30 to 60 minutes, depending upon the size of the pans. Larger loafs will be closer to 60 minutes. Test the center with a toothpick and remove from the oven when it comes out clean. Cool for 15-20 minutes before removing from the pan. Z-Bread/Muffins can be frozen to enjoy later.
