You can substitute Splenda for the sugar to save even more calories....I used the real stuff though and each Monkey Muffin was just over 105 calories! They are tasty, warm, sweet and delicious...Plus, their small muffin shape makes a cute presentation and easy self-serve portions! Hope you love em!

1 can Refrigerated Biscuits (reg sized biscuits)
1/2 cup Sugar
3 TB Ground Cinnamon
Parkay Spray Butter (you'll use 10sprays/svg)
10 Pecan Halves, Chopped


How Do I Make "Monkey" Muffins?

Here is how you make "Monkey" Muffins:

Preheat oven to 425 degrees. Combine Sugar and Cinnamon in a zip-lock bag and shake to mix. Prepare a 6-serving Muffin Pan by spraying each cup with 3 sprays of Parkay Spray. Sprinkle each very lightly with the Cinnamon-Sugar Mix. Drop a few of the chopped pecans into each cup and spray them once with Parkay. On a tin-foil work surface, open the can of biscuits. Cut each biscuit into several (usually 8) pieces--use a pizza cutter for easy cutting. Spread a little of the Cinnamon-Sugar mixture onto the work surface and roll each piece of biscuit to coat. Randomly (and loosely) drop the coated pieces into each muffin cup. Fill 1/2 way and spray with with Parkay 3 times to "butter" the pieces of bread. Finish filling each muffin cup with the peices and then spray the tops with 3 additional sprays of Parkay. Place in the oven on the center rack and bake until the Monkey Muffins rise and are baked to a light-golden color. It usually take about 8-10 minutes. Remove from oven and invert pan onto serving dish. Serve warm.You can also make a quick glaze dip with Powdered Sugar and water....this is not included in the nutritional totals. Some people like to use brown sugar in Monkey Bread....if you would like to do this, you can substitute: 1/4 cup brown sugar mixed with 1/4 white granulated sugar (instead of the 1/2 all granulated in this recipe).Enjoy! *Makes 6 servings.Number of Servings: 6Recipe submitted by SparkPeople user SWT.HRT.
