Spray muffin pans with nonstick spray or line with paper liners. Wash cherries, and cut in 1/2 to remove pits. Chop the cherries. In a small bowl, combine the milk add oats, and let stand at room temperature for five minutes. In a medium bowl, combine the flour, baking powder, baking soda, and salt. In a large bowl, use a mixer to beat the eggwhites till frothy, add applesauce and both of the sugars and beat till well mixed. Add the almond extract and combine. Blend in the oat-milk mixture. Stir in the flour mixture just to combine. Fold in the cherries. Fill muffin cups 3/4 full. Bake 15 minutes or until a toothpick inserted into the center comes out clean.
