Here is how you make Cinnamon Pear Muffins:

Peel and dice enough pears to make 3 cups. In a bowl, mix with sugar. In a large bowl, whisk together eggs, oil and vanilla. Add pear mixture and blend well. In another bowl, combine flour, baking soda, cinnamon, nutmeg and salt. Add to oil micture and stir just until moistened and blended. Do not overmix. Fold in dried cranberries.Spray with cooking spray the muffin cups. Spoon batter into each cup, filling 2/3 full.
