Finely chop anjou or any winter pears. Put chopped pear pieces in a bowl and toss with lemon juice. Skin may be left on or off the pears, baker's choice. Mix dry ingredients. Melt the butter. Then mix the wet ingredients into the dry ingredients. Finally, add fruit and mix well. Fill muffin cups about 3/4 full. Bake 25 minutes. This recipe could also be made substituting firm apples or different dried fruit and even adding nuts or chocolate chips.
