juice from one lemon

1 teaspoon pure vanilla extract

reheat the oven to 375 degrees and generously spray a 6 cup jumbo (or 12 cup standard) muffin tin with nonstick spray (or line with paper baking liners).In a large bowl, stir together the flours, sugar, baking powder and salt. In a separate bowl, mix together the ricotta, milk, applesauce, eggs, lemon juice, lemon peel, and vanilla; whisk well until blended.Make a well in the center of the flour mixture and pour in the wet ingredients; stir until just moistened (the batter will have lumps ? resist the urge to over-mix!!
