In a large bowl, rub the sugar and lime zest together with your fingers until the sugar is moist and the fragrance of lime strong. Whisk in flour, baking powder and salt. In a large glass measuring cup, whisk the sour cream, eggs, vanilla, lime juice and melted butter together until well blended. Pour the liquid ingredients over the dry ingredients and, with a rubber spatula, gently stir to blend. Do NOT over mix, batter will be lumpy. Divide evenly between 12 muffin cups.Bake approximately 18 minutes, or until tops are golden and a thin knife inserted into the center or the muffins comes out clean. Transfer pan to a rack and cool for 5 minutes before removing and serving.
