This recipe has so many possibilities to "lighten" up the calories and fat. I just wanted to present a tasty morning muffin. I use large muffin tins but if you divide the batter by 12, you should use regular size tins.

2 1/4 cup flour
2 teas. baking soda
1 1/2 teas. ground cinnamon
1/2 teas. salt
1 1/2 cup sugar
3 large eggs
8 Tbs.(1 stick) butter
1 teas. vanilla extract
1 1/a2 cups grated carrots
1- 8 ounce can crushed pineapple, drained and pressed dry with paper towels
1/2 cup sweetened, shredded coconut
1/2 cup raisins
1/2 cup chopped walnuts or pecans



How Do I Make Morning Glory Muffins?

Here is how you make Morning Glory Muffins:

Preheat oven to 375 degrees. Coat muffin tin with vegetable spray. Whisk flour, baking soda, cinnamon and salt together in large bowl. In a separate bowl, whisk the sugar ,eggs, melted butter and vanilla until smooth. Gently fold the egg mixture in to the flour mixture with a rubber spatula until just combined. Fold the carrots, pineapple, coconut, raisins and nuts into the batter. Divide the batter evenly. Bake 22-25 minutes or until golden and a toothpick comes out clean. Let muffins cool a few minutes in the pan. Remove and place on wire rack. Cool 10 minutes before serving. Makes 12 muffins.Number of Servings: 12Recipe submitted by SparkPeople user SUSANMIKESKA.
