This recipe has so many possibilities to "lighten" up the calories and fat. I just wanted to present a tasty morning muffin. Coat muffin tin with vegetable spray. Whisk flour, baking soda, cinnamon and salt together in large bowl. In a separate bowl, whisk the sugar ,eggs, melted butter and vanilla until smooth. Gently fold the egg mixture in to the flour mixture with a rubber spatula until just combined. Fold the carrots, pineapple, coconut, raisins and nuts into the batter. Divide the batter evenly. Bake 22-25 minutes or until golden and a toothpick comes out clean. Let muffins cool a few minutes in the pan. Remove and place on wire rack. Cool 10 minutes before serving.
