3 oz Cream Cheese

1 Tbsp Ground Flax
1 Tbsp Ground Almond Meal
3 tsp Splenda
1/2 tsp Cinnamon
15 drops Capella - Cinnamon Danish Swirl
2 tsp Splenda Brown Sugar Blend
3/4 C Cool Whip FREE


How Do I Make Sweet Fiber "Oopsies" Mini-Muffins?

Here is how you make Sweet Fiber "Oopsies" Mini-Muffins:

Preheat oven to 375 degrees.Using 2 bowls, separate whites from yolks (placing yolks in smaller bowl). Add 1/4 tsp and a pinch of salt to egg whites. Add 1/4 C Liquid egg whites to the egg white bowl. Using hand mixer, mix on high until whites are very fluffy and form stiff peaks.In smaller yolk bowl, add 3 oz cream cheese, Splenda, almond extract ground flax, ground almond meal, cinnamon and capella-Cinnamond Danish drops. Mix together. Ok if some cream cheese lumps remain.Gently fold the yolk mixture into the stiffened egg whites, being careful NOT to break down the whites. Fold over a couple of times, but do not over mix.Drop by tablespoon into mini-muffin pan. Mounding tops slightly. Sprinkle tops lightly with Splenda brown surgar blend. Place in oven for 15 minutes. Turn oven off, and cool pan while in oven. DO NOT OPEN OVEN or they will fall. I usually serve 3 per serving, topping with a slight drizzle of DaVinci Hazelnut syrup and a small dollop (1/2 tsp) of Cool Whip FREE.
