When Zucchini is over running everyone's garden in the summer, I ask them to bring me the ones that get too big for them to eat. I put them in the blender and put them in freezer bags in one cup increments. Then thaw them in bowl of warm water when I want to make them fresh in the winter. This is a great alternative to holiday treats. I usually make a double batch. If I have time, I make several double batches. They freeze well and are great to pull out for unexpected guests or holiday parties. I have to hide them at my house or they get gobbled up.You can also make them as a loaf. I have standing requests from my friends at the holidays so I make them in the half loaf pans and freeze them. I pull them out a couple of hours before I deliver them. They come out as fresh as the day they were made. Nobody can tell the difference.

* Egg, fresh, 1 large
* *Crisco Pure Vegetable Oil, 4 tbsp or 1/4 cup
* Orange Peel, 1 tsp

Here is how you make Joy's Zucchini Muffins:

Preheat oven to 350.Stir together flour, cinnamon, baking soda, salt and baking powder set asideIn separate mixing bowl beat together sugar, shredded (mashed) zucchini and egg. Add oil and orange (or lemon) peel and mix well.Stir in flour mixture.Spray muffin pans with cooking spray (do not use the flour kind). Fill 2/3 way with mixture.(If doing 12 fill 3/4 way).Bake for 15 minutes or until toothpick inserted in center comes out clean.Remove to cooling rack or plate. I put mine upside down on a plate for about 15 seconds then flip over. This prevents the bottoms from sticking to the plate if you don't have a cooling rack. Makes 18 small muffins. You can do this in 12 muffins also just increase the cooking time 5 minutes or until a toothpick comes out clean.You can also fold in nuts if you wish and for a sweeter treat, ice with cream cheese or vanilla frosting.Number of Servings: 18Recipe submitted by SparkPeople user ACUFF1156.
