This recipe yields 1 serving.1. Place oatmeal, water and sliced bananas into a small pot and bring to a gentle bubble over medium-high heat. DO NOT cook on HIGH heat as this will speed up the process too quickly and the bananas won't cook down.2. While your oatmeal is cooking, place peanut butter into a small microwave safe dish and heat it for 25-30 seconds. Remove, give it a generous stir and set aside. I call this 'drippy peanut butter.'3. Stir constantly for a few minutes to ensure that the oatmeal won't stick to your pan. Once it is at desired consistency (anywhere from 5-7 mins), remove from stove and into a bowl. A wider bowl is ideal (spreads out the oatmeal for better topping coverage).4. Sprinkle cinnamon over oats and give it a good stir to incorporate.5. Drizzle your 'drippy peanut butter' all over your bowl of oats. Add your preserves on top. Grab a spoon, a seat, some tea/coffee and have at it! Be sure to take a moment to experience all the wonderful aromas mixing in your bowl. :)A few notes: you want the banana to break down a bit because its purpose is to lend its natural sweetness to the oats and also helps to add a smoother consistency. Mix in's or switches:- Omit banana, add milk (vanilla flavored almond or soy milk work well)- Switch peanut butter for almond butter, walnut butter, etc. any flavor or texture of nut butter works very well.- Use any flavor of jam/preserves that makes your heart smile.- Toss in fresh fruit (such as apples, raspberries or blueberries) in place of or in addition to the jam.- Go crazy!! Get creative!! Add chopped toasted nuts, chocolate chips, wheat germ, flax seeds, pumpkin puree, nutmeg, allspice, brown sugar, dried cranberries, citrus zest, anything you like!
