This easy to make loaf is gorgeous, nutritious and delicious and I've made it with several different flours (wholewheat &/or Buckwheat), using organic cane sugar instead of brown sugar and variations for the fruits I use and you just can't seem to make a mistake with this one ... it's a winner. When I swap out for a different type of flour or sugar or vegetable oil, I just follow the quantities in the recipee and it always works.

1 cup low fat plain yogurt
1/2 cup unsweetened apple sauce
1 large egg
3/4 cup brown sugar, unpacked
1 cup flour (white, wholewheat, buckwheat or a combination of these)
1 tsp salt
1/2 teaspoon baking soda
1 - 1 1/2 cups of fruit (dried fruit for the most part: raisins, dates, cranberries, pineapple, etc)

Here is how you make Fruit Oatmeal and Yogurt Loaf:

I do all the mixing for this recipee by hand, I don't use a blender.Combine the rolled oats and yogurt in a bowl and let the oats soak in the moisture of the yogurt while you prepare the rest of the ingredients.Combine the vegetable oil, egg & sugar until well mixed. Combine the dry ingredients together: flour, salt and baking soda - mix. Add the dry ingredients to the oil, egg & sugar mixture until well blended. Once all of this is combined, add the yogurt oat mixture and mix by hand. Add whatever combination of fruits you have chosen to use - mix well and pour into a loaf mold - either non stick or coat the mold with a bit of butter or oil to prevent sticking. This recipee can make 1 large loaf or be spead out into 2 molds for smaller loafs (baking times will be shorter - I always make 1 large loaf)Bake at 400 degrees Farenheit for approx. 90 mins or until you can stick a knife into its centre and it comes out clean.Let it cool and serve as desert, breakfast, as a snack ... enjoy.
