Preheat oven to 350 degrees. Spray cookie sheet with Cooking Spray (I used one light spray of Canola Oil Spray per cookie sheet and did not need to respray)In a large mixing bowl, cream room temperature Buttery Spread with Sugars using a hand mixer. Add Egg Substitute, Grated Squash, and Vanilla to bowl and mix to combine.On top of wet ingredients, add, in this order, Oatmeal, Flours, Baking Soda, Salt, and Cinnamon. Using still beaters, gently combine dry ingredients, then turn on mixer and incorporate dry ingredients into wet ingredients until just combined.Fold Butterscotch Chips into batter and drop by level tablespoons onto prepared cookie sheet.
