300 ml or two thirds milk and one third water

Here is how you make Pancakes (Crepes):

1. Mix flour and salt, make a well in the center and break in the egg.2. Add half of the liquid, gradually work in the flour using a wooden spoon and beat the mixture unitl it is smooth.3. Add the remaining liquid gradually and beat until well mixed and the surface is covered with tiny bubbles.Note: the batter may be used at once or left ot stand in a cool place. If it is left to stand it will thicken a little and it may be neccessary to add a little milk before using. This mixture may be beaten with a egg whisker or an electric beater.4. Spray a 6 to 7 inch pan with non-stick canola or olive oil spray and heat.5. Pour just enough batter to coat the bottom of the pan. Just a thin layer. Place over a medium heat. Pancake will pull away from the sides when it is ready to be flipped over. You may use a spatula to do this or if you are a dab hand at flipping you may do that too.6. When lightly browned on both sides, place the pancake on a plate. Continue in this way until all the batter is used. Keep warm in a warmed oven. 7. Sprinkle with cinnamon and sugar mix or sprinkle lightly with sugar and add a squeeze of lemon juice if you like it tart. 8.
