1 C Water
1/2 Tsp Cinnamon
3 Tbsp Brown Sugar

1 Tbsp Cornstarch
2 Tbsp Cold Water

2 Sheets Puff Pastry (I use Pepperidge Farms)


How Do I Make Peach Hand Pies?

Here is how you make Peach Hand Pies:

4 C Peaches (aprox 5-6 medium sized peaches), large chunks (no need to peel)1 C Water1/2 Tsp Cinnamon 3 Tbsp Brown SugarCombine all and bring to a boil. Simmer for 15 min.1 Tbsp Cornstarch2 Tbsp Cold WaterCombine and mix with fork until smooth. This is known as a slurry. Add the slurry to the peach mixture and stir for 1 min until sauce thickens. Set aside to cool slightly for 20 min. 2 Sheets Puff Pastry (I use Pepperidge Farms)Cut each sheet into 6 even pieces. Usually puff pastry is frozen and tri-folded. I usually unfold the dough, slice on the lines where it was folded and then slice those three strips in half making 6 rectangle pieces. Do that to both pieces. Distribute the filling evenly onto 6 pieces making sure to leave about a 1/4" border on the edge with no filling. Top with the other plain pieces of dough and crimp the edges of the two pieces together with a fork. Poke the top of the pastry twice to ensure the pastry doesn't explode in the oven. Optional: Brush top with an egg wash (makes the pastry shiny) and sanding sugar (gives a nice little crunch to the pastry)Bake for 35 - 40 min until golden brown. Cool and enjoy room temp or warmed.
