This is a custard-like fruit dessert. You can use peaches, cherries, apples, or pears. The addition of ricotta gives it more substance, but you can also use 1 cup milk instead of the combination of milk and ricotta. I only use 1/4 cup sugar because I don't like it very sweet, but you can use more sugar or a combination of sugar and Splenda to keep the calories down. Spray an 8" x 8", 9" x 9" or 7" x 11" glass baking dish with nonstick spray and set aside.Place peaches briefly in boiling water to loosen the peel. Remove the peel then slice and place at the bottom of the baking dish.Put the egg substitute and sugar into a mixing bowl. Using an electric mixer (hand-held is okay), beat the egg substitute and sugar for about 2 minutes until it is foamy. Add the ricotta, milk, rum, and vanilla and beat until smooth. Then add the flour and again beat until smooth. Pour the batter over the fruit. Bake at 375 degrees for 10 minutes.
