Preheat oven to 350.Peel and slice your apples into a large bowl. Sprinkle the apple pie spice on and toss to coat all the apples. In a small bowl combine the apple juice and cornstarch to remove any lumps. Pour this over the apples and toss to coat all the apples. Place one crust in a 9 inch deep dish pie pan, fill with the apple mixture, and top with second crust.
