In the meantime, you can cut up the apples. It is okay if it breaks a little and doesn't fit, you are going to use some greased fingers and ingenuity to press the crust thinner and fill out the plate.Then add the apple mixture and turn the second pie crust out on top. You can also roll this crust separately if you want to have defined edges to your pie.
