How Do I Make Lemon Blueberry Pie?

Here is how you make Lemon Blueberry Pie:

1) Preheat oven to 350°F.2) In a 9" cake/pie pan, unroll one dough piece and lightly dist dough with flour on both sides. Then it press firmly against edges of the pan. (For a firmer bottom crust, you can pre-bake bottom shell for 3-5 min before adding filling. Do this now if you want so the dough can cool before adding the filling.)3) Heat a medium sauce pan over medium low heat. add blueberries and jam, stirring frequently. 4) Wash the lemon and with a zester or micro plane, zest the entire lemon. Then cut lemon in half and juice, making sure that no seeds make it to the filling. Mix in 1 tsp of flour and 1 tsp of corn starch to mixture and stir until filling begins to thicken.5) Carefully pour mixture into pie crust. With the second piece of dough, carefully unroll and lay on top. Then with your fingers, press dough into bottom crust and side of pan in order to seal in filling. With a knife, cut slits into the top and place on a baking sheet.6) Bake pie in oven for 15 min, then pull the pie out and cover crusts with foil to prevent over-browning of crust. Bake for another 10 min or until the enter of the pie crust is the same color as the edges. Take the foil off and sprinkle a little bit of sugar for decoration. Bake uncovered for a final 3 min.7) Remove pie from oven and let it cool on a cooling rack for at least 2 hrs before serving.Makes one pie, about 8 servings per pie.Number of Servings: 8Recipe submitted by SparkPeople user KIMAWONG.
