1 Can lite coconut milk
1 1/2 tbsp flour
3 tbsp water

1 tsp vanilla
1 8 oz pkg. neufchatel or fat-free cream cheese (calculations based on neufchatel cheese)
1 pkg. Murray's sugar free chocolate sandwich cookies

Here is how you make Guilt-free Peanut Butter Pie:

Crust: In a food processor or by hand, crush all but 2 of the cookies into fine crumbs. Drizzle water in a tsp at a time until the crumbs are moistened and stick together. Press into a pie plate and bake at 350 for 10 minutes. Cool.Meanwhile, prepare filling:Mix peanut butter powder and flour in a medium sized sauce pan. Gradually add water and stir to a peanut-butter consistency. Gradually stir in coconut milk. Mix in stevia gradually - to taste. (If you like a really strong peanut butter taste, you can add peanut butter powder but it will change the nutritional info.) Cook at medium heat until thickened. Stir in vanilla, cover and cool the mixture - stirring occasionally to avoid a crust forming on top. In a mixing bowl, beat cream cheese until smooth. Add the cooled mixture and beat until smooth. Pour into prepared pie crust and chill until ready to serve. If you wish, you may marble in Smuckers sugar-free hot-fudge sauce (adds about 45 calories per slice).
