Set aside your 1/4 c toasted coconut-In a medium sauce pan- poor 1/2 C Lite Coconut Milk,sugar, and cornstarch, stirring it over medium heat until smooth.Then add your 1% milk- and egg-and 3/4 C coconut-bring to a boil stirring constantly until mixture thickens into a thick pudding like mixture-Remove from heat. Stir in Vanilla. Pour into crust- and put in fridge until chilled. Top with Cool Whip and sprinkle with toasted coconut. Keep in fridge until ready to serve!
