Mix pudding with milk according to package directions. Stir in the coconut and the extract.While the pudding sets, break graham cracker sheets in half and place each half into a bowl. Top each cracker with 1/4 of the pudding mix (1/2 cup) and 2 T. Cool Whip Free. Sprinkle a little extra coconut on top, if desired.Makes 4 servings.Note: we only need 2 servings, so we mix up the pudding and then refrigerate it in 2-serving containers.
