2 cups whole wheat flour
1 cup rolled oatmeal, ground in food processor
1 tsp salt
1/2 cup Butter flavored (or regular) shortening
3/4 cup Greek yogurt
1 egg
5 tablespoons of COLD water
1 tablespoon white vinegar


How Do I Make Lighter Pie Crust?

Here is how you make Lighter Pie Crust:

Combine whole wheat flour, oat flour, and salt in a large bowl. Add shortening and cut in with a pastry cutter. Add yogurt, a bit at a time, and cut into the mixture.In a separate bowl, beat an egg and add to flour. Add 5 tablespoons of cold water and 1 tablespoon of vinegar and stir until incorporated. Split dough into thirds. At this point, you can freeze what you won't be using today. Roll out your dough until a little (1/2" or so) larger than your pie plate. Carefully lift from counter to pie pan and press into corners. Cook for 5-10 minutes before adding your filling. I do 5 minutes for fillings that need to bake and 10 minutes for fillings that are already cooked (like chicken pot pie from the stove or whatever). Then cook according to your filling directions.Serving Size:?makes 3 pie crusts, 6 servings each
